Elish Mach! the mention of this wonderful variety of fish will make your mouth water especially if you happen to be a bengali living anywhere in the world, it is unlike any other fish in taste and looks, it has silvery scales which can be scraped easily and the skin and flesh is so soft that it has to be chopped carefully. The peculiarity of this fish is that it swims towards the river from the sea during the spawning seasons which is in the monsoons and the fishermen catches it then . In kolkata the first catch of the season makes headlines ! you can cook the fish in many ways the most popular is steaming ,actually you can fry or roast nothing can go wrong , the easiest recepe is PATURI....grind atablespoon of mustard seed ,two green chillies and half an onion (optional) and mix the paste and two slices of the fish thoroughly put salt and leave aside for 5 min meanwhile cut two banana leaves into squares and wrap the two fish slices in each banana leaf fold it and tie it with thread, steam it for 7 min and serve hot!
